Provocative Asparagus Frittata
Ingredients
- 1 tbsp. butter
- 3 tbsp. olive oil
- 1/2 lb. (600 g) fresh asparagus
- 1 tomato
- 6 eggs
- 1 tsp. water
- 1 tsp. chopped fresh thyme
- 3 tbsp. freshly grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- Italian seasoning
- Salt and Pepper to taste
Preparation
- Melt butter in a skillet, and stir in olive oil and asparagus.
- Cook until the asparagus is tender, for about 5 minutes.
- In a bowl, whisk together eggs, chopped tomato, water, and thyme. Pour into the skillet, and cook for five minutes.
- Transfer the skillet to the preheated oven at 325° F (165° C). Bake frittata for 10–15 minutes, until eggs are ready.
- Sprinkle a dish with Italian seasoning to add a bit of Mediterranean flavour to the frittata. Top the mixture with Parmesan and mozzarella cheeses.
- Turn on the broiler, and broil until cheeses are melted.
