Provocative Asparagus Frittata
Ingredients
1 tbsp. butter
3 tbsp. olive oil
1/2 lb. (600 g) fresh asparagus
1 tomato
6 eggs
1 tsp. water
1 tsp. chopped fresh thyme
3 tbsp. freshly grated Parmesan cheese
1/2 cup shredded mozzarella cheese
Italian seasoning
Salt and Pepper to taste
Preparation
Melt butter in a skillet, and stir in olive oil and asparagus.
Cook until the asparagus is tender, for about 5 minutes.
In a bowl, whisk together eggs, chopped tomato, water, and thyme. Pour into the skillet, and cook for five minutes.
Transfer the skillet to the preheated oven at 325° F (165° C). Bake frittata for 10–15 minutes, until eggs are ready.
Sprinkle a dish with Italian seasoning to add a bit of Mediterranean flavour to the frittata. Top the mixture with Parmesan and mozzarella cheeses.
Turn on the broiler, and broil until cheeses are melted.
