Ingredients:
1–2 lbs. (450 g–1 kg) sirloin beef
1 cup vegetable stock
2 large tomato, cut into cubes
1 large carrot
½ cup of tomato sauce
1 medium onion, finely chopped
2 tbsp. olive oil
1 tsp. of cumin
½ cup of fresh cilantro
Salt and Pepper to taste
Preparation:
Cut beef into even cubes and place it in a stew pot. Add olive oil, and stir fry the beef on each side for about 15 minutes. Cut carrot into cubes, add onions, cumin and half of your vegetable stock into the pot. Stir well and close a lead. Let it cook for another 15-20 minutes on medium heat. Add tomato sauce the rest of the stock, salt and pepper to taste. Bring it to boil, add cilantro, fresh tomato and let it simmer for 10 minutes.
