Spicy Pappardelle with Scallops

Ingredients:

1 Serrano pepper, chopped

1 jalapeño pepper, chopped

1 green bell pepper, chopped

1 lb. (450 g) scallops

1 garlic glove, chopped

6–8 tomatoes, skinned and chopped

1 bunch fresh basil leaves, chopped

1 cup Swiss cheese, shredded

4 tbsp. olive oil

½ lb (225 g) cooked pappardelle pasta

Salt and Pepper to taste

 

Preparation:

In a pan, sauté olive oil with the garlic, tomatoes, peppers, and basil for ten minutes.

Add scallops into the sauce and cook until its ready, for about 10 minutes.

Add cooked pasta into the pan and mix well.

Transfer the mixture into a baking dish.

Top with Swiss cheese and bake for 10 minutes at 350° F (180° C).
