Ingridients:
6 soft tortillas
1lb (approx 450 gr) of grilled shrimp, out of shell
2 small cucumbers
1 large ripe avocado
2 tbsp of olive oil
½ cup of cilantro
1 fresh lime
1 pinch of sweet chilli
4 tbsp. of shredded cheddar cheese
Salt and Pepper to taste
Preparation:
On a skillet, preheat olive oil and grill shrimps until they are ready. Set aside. In a bowl mash avocado until its puréed. Cut cilantro and mix it with avocado, add salt and pepper to taste. Cut cucumbers into thin slice sticks. Place soft tortillas on a plate and put a scoop of avocado to each tortilla. Distribute shrimps among all tortillas in even portions. Squeeze a bit of fresh lime on each tortilla, sweet chilli and add a few sticks of cucumber. Sprinkle cheese on top and tortilla is ready to go.
